Every Roast Sets Off the Alarm: Taming a Smoky Oven

Oven setting off the smoke alarm every time you cook? Spills, new-oven burn-off, broiler grease and a small kitchen are the usual causes. Here's what to fix.

In one line

Most ovens that set off the smoke alarm are burning old spills or grease, or are new and still burning off factory coatings, and in a small kitchen with little ventilation the alarm catches it fast.

What's going on

Food that boils over and grease that splatters onto the oven floor, the broiler pan or a hidden bake element smoke every time the oven heats up. A brand-new oven can smoke and smell during its first few uses while manufacturing oils burn off, and many manuals say to run it empty at high heat with windows open before cooking. A self-clean cycle can also put out smoke and fumes. Several manufacturers warn that those fumes can harm pet birds, so move birds to another room and ventilate well.

City kitchens add their own challenge. The smoke alarm may be a few feet from the range, and many range hoods and over-the-range microwaves recirculate air through a filter instead of venting it outdoors. If the oven runs hotter than its setting, oils smoke sooner than they should. Many fire safety sources note that ionization smoke alarms are more prone to nuisance alarms from cooking than photoelectric ones.

What you can check in five minutes

  1. Once the oven is cool, look at the oven floor, the walls and the broiler pan for burned-on spills, and clean them according to your manual.
  2. If the oven is new, do the burn-off your manual describes with good ventilation.
  3. Put an oven thermometer on the center rack and compare it with the set temperature after preheating.
  4. Turn the hood or microwave vent fan on before you start cooking, not once the smoke appears.
  5. Clean or replace the grease filter, and the charcoal filter if your hood recirculates.
  6. Use a lower rack or a lower broil setting for fatty foods.

Rent, own or co-op: who handles it?

Don't disconnect, move or take the batteries out of a smoke alarm, especially one the building installed. If it sits so close to the kitchen that it goes off constantly, ask the super or management about it. Oven service depends on who owns the appliance. Check your lease or ask your building.

What a technician will look at

  • •Oven temperature accuracy and the temperature sensor
  • •Bake and broil elements or burners for hot spots
  • •The door gasket, which can leak smoke into the room
  • •The convection fan, if your oven has one
  • •Vent and hood performance above the range

Andre's field note: In tight kitchens, I usually start with a thermometer test. An oven running well past its setting turns every roast into a smoke test. If a gas oven also lights with a whoosh or a bang, read about a gas oven that's slow to light before you use it again. If the temperature is off or one element glows unevenly, book oven repair.
