Steam and holding equipment fail primarily around water and controls. Steamers and kettles depend on water valves, level probes, drains, and safety controls, and sediment or scale on a probe produces erratic level readings that mimic other faults. Drain and condensate paths clog. On griddles and charbroilers, thermostats, valves, and burner assemblies are the wear items, and warped or uneven plates come from thermal abuse rather than component failure.
