The Lower East Side and much of Chinatown are defined by tenement buildings, typically five or six stories of walk-up apartments originally built for crowded occupancy. New residential buildings there tend to use recent appliance models with electronic controls and diagnostic codes, quite different from the pilot-lit stoves and mechanical timers that still turn up in older walk-ups a short distance east.
