A door-type or conveyor dishmachine is built around a heavy-gauge stainless tank, a wash pump moving serious volume, and either a booster heater that delivers a sanitizing final rinse at high temperature or a chemical sanitizing system, because the machine exists to satisfy a health code, not to be quiet.
