The cube shape and the evaporator material both affect harvest behavior, cleaning intervals and long-term corrosion resistance, which are the three things that actually determine whether an ice machine gives a bar ten good years or three bad ones.

This is commercial equipment throughout. Hoshizaki does not build residential kitchen appliances, and there is no Hoshizaki washer, dryer, home range or household refrigerator. What can confuse people is that undercounter ice machines and small refrigerated units do occasionally end up in high-end residential settings, in a penthouse bar or a townhouse entertaining space, where an owner or designer wanted commercial-grade ice production instead of a refrigerator's ice maker. Those installations are legitimate, but the equipment is still commercial equipment, with commercial drain, water and clearance requirements that a residential contractor sometimes underestimates.
